When it came to devising the concept of our next pale ale, we drew inspiration from the coastal locale of SoCal and the land down under. Sourcing classic Cascade hops from the Pacific Northwest and Australian Galaxy hops from… yes…Australia, we made a beer both lovers of resinous green buds and rip-curling surfers will find downright rad. At the same time, we stayed true to our San Diego love of pushing the hop boundaries of this style. While some might think it lingers on an edge far closer to IPA, with all the dry-hop flavor and aroma, it’s actually right in line with the current-day interpretation of a West Coast pale. Ours just so happens to have an Aussie accent that yields a juicy amount of grapefruit and passion fruit. So veg out or venture out. Either way, rip one open and taste for yourself this awesome golden amber nectar!

This mead is based on an incredible ginger snap cookie that my friend Amy made to send to soldiers in Afghanistan. This mead is a blend of Orange Blossom and Sunflower honeys with molasses, ginger and other spices.

A collaboration beer between Mikkeller and Against the Grain Brewery.  Simply a Blood Orange Pilsner.  Brewed with German Pilsner and munich malts, hopped with American Citra, Columbus, Amarillo and Czech Saaz and fermented with Danish lager yeast.  Then we added the zest and juice from a shit-ton of blood oranges.  The result is a nice easy drinking lager that exhibits a tart and citrusy aroma and flavor.

t your typical “Jelly of the Month Club” beer. Dark roasted malt and bittersweet cocoa and coffee flavor and aroma burst from this pitch black milk stout. The full body and sweetness are derived from the addition of lactose (aka milk sugar) which is not fermentable by beer yeast. A healthy dose of Nugget and Crystal hops provides a counterpoint to this ale’s rich and complex maltiness.

The Dissident is an Oud Bruin, a distinctive Flanders-style sour brown ale, with a heavenly aroma and flavor. Our first wild yeast beer, we use Brettanomyces and local cherries to give The Dissident its characteristic sour taste. Our stiffest brewing challenge, it must be fermented in isolation from our other beers for a full 22 months, partly in pinot and cabernet barrels. The words coddled and “worth it” come to mind.

This IPA is spiked at bottling with Brettanomyces, a wild yeast that, over time, brings about charmingly unpredictable complexities of spice, funk, acidity and more. The operative words in our beer-cellaring thesis are “over time.” For those of you who are impatient or like to experiment, the earliest we recommend sampling this beer is one year before the date on the label. The beer won’t be fully carbonated until that date. Ideally, you’ll want to cellar the beer up to-or beyond-the Enjoy After date to help it reach its full evolutionary potential. At that point, some facets of the Brett characteristics will have mellowed, while others will have become more profound; it all matures into a fascinating and delicious culmination. The coffee notes in Stone Americano Stout are bold, rich and full of American swagger. Based on an original recipe from 1795, Very Bad Elf has nutty and sweet-roasted flavors attributable to its use of an ancient pale malt, uniquely recreated for this delightful ale. A rare variety of Fuggles hops dating to the mid-1800’s gives the beer a soft, rounded bitterness and uncanny drinkability.

A fantastic Christmas beer, but one that defies the universal custom of a stronger, spicier beer for the holiday season.  At 7% alcohol by volume, this one is relatively lighter in alcohol than the Guldenberg, and does not pack the hop punch of the XX.  It combines some of the best elements of those other two beers – with a fine balance of malt and hops, complex character, a refreshing dryness, and a gorgeous cellar aroma – but is distinguished by its festive copper color.

Olde England meets the New World in this strong, warming golden ale. A generous amount of famous English malt is masterfully balanced with an astounding 45 ounces of fresh hops – including English Cascade – per barrel. Bad Elf is brewed by Peter Scholey, master brewer for the late and much-lamented Brakspear Brewery of Henley-on-Thames, England. Peter has bought up the entire crop from the single row of Cascades grown in the U.K.

It is a SUPER sparkling crisp and dry Saison that has been after fermented with milk acid bacterias and dry hopped over and over to give the beer a crisp and smooth tart finish (not to mention…. there is a lot of hops of course…) With the wonderful notes that can be attributed to aging such a fine beer in white wine barrels.

A Belgian Dark Strong Ale brewed with dark candy sugar, a gentle hint of star anise and a complexity found only in a Belgian yeast strain. A nice warming effect from it’s 9.3% ABV gives this beer a tidy finish.

Following its lengthy cask maturation and the blending of dry hops, this beer has a beautiful balanced finish, rich and smooth with an aroma of orange, ripe cherries and lychee.

An imperial red ale brewed using extra pale ale, rye crystal and crystal malts with a touch of wheat. A first for Innis & Gunn, the beer was transferred into first fill bourbon casks and then dry hopped with a blend of Ahtanum and Hallertau Hersbruker hops for maturation.

The dry hopping with impart an intense and distinctive hop aroma of orange, Turkish delight, dried cherries and lychees.

A big, Belgian-style Wit brewed with coriander and orange peel and fermented with Pinot Noir juice. After fermentation a fraction of the batch is aged in Oregon Pinot Noir barrels, and another fraction is aged on oak staves. The beer is blended together before packaging. This has been one of our most popular Limited Edition beers at both our Rehoboth Beach, DE brewpub and at festivals. It successfully marries the refreshing citrusy qualities of a Belgian-style white beer with the robust complexity of a bold red wine.
Valar Dohaeris is 9% ABV, brewed with pils, wheat and oats, flaked barley, and hopped with noble hops. It pours a beautiful copper-tinted hue with a full, fluffy white head. Sweet grain and honey are prevalent in the aroma. The flavor opens with a bright sweetness thanks to the Belgian candi sugar used in brewing. The finish is moderately dry and effervescent with just a hint of Belgian yeast character.

North Peak Diabolical IPA has hops from nose to tail. This IPA is unfiltered and dry-hopped with Michigan grown Chinook and Cascade hops. It has a smooth malt character and citrus pine aroma.

.Mangoes and habaneros, we know everyone puts them together, a combo that anyone can think of, but yeah we did too so get off our back. This beer has a nice lemony acidity from the presence of two strands of lactobacillus, then a whole mess of mango puree is added. On top of that we threw in a bunch of habaneros for some ass kicking heat on the finish. The sweetness of the peppers combines with the mangoes for this unique but delicious

Black Maple was a beer we brewed on the fly. An open brew day was reason enough to go big and bold. We put out heads together and crafted an imperial porter with deep nutty notes, a touch of smoked malt, a melange of crystal malts, and a rich chocolate backbone. Locally harvested maple syrup from Sticky Pete’s was added to the kettle. The whole batch was then placed into bourbon barrels where it rested for 11 months. This beer was consistently some of our favorite barrels to sample, we hope you enjoy.

The Siberians believed there was a ‘World Tree’ that served as the Axis Mundi, connecting the different worlds through its roots and branches. While this Russian Imperial Stout isn’t necessarily the world’s cosmic axis, it does connect rich flavors in a way to deliver you a cosmic beer. Every year we age a special batch of our much-loved Russian Imperial Stout in Bourbon barrels. The depth, intensity, and complexity of the flavor profile of this special release, like its predecessors, make it a worthy tribute to Old Rasputin.

A caramel centered stout accentuated by Athens’ Own Dawn Chorus French Roast. We start from a stout with minimal roasted barley and an abundant amount of caramel malts (Special B, cara 8); this creates sweet flavors and mouth feel to boot! After fermentation the beer is cold conditioned on four pounds of course ground coffee beans for one week to add color and lots of roasted flavor. Java the Stout not only contains approximately a half a cup of coffee caffeine per pint, but is also 6.5% abv. Great body with  robust aroma and pungent coffee flavor. What more could you ask for?

Bourbon Barrel-Aged Pumpkin Porter. What’s in a name? Sometimes the simplest can be the most descriptive, and in this case, derisive and divisive! After much internal debate (ad nauseum! Bourb[KY]n, anyone?), we decided a single letter change was the best way to embody the bourbon barrel-aging that adds layers of complexity to an already exquisitely spiced pumpkin porter.
